One Pot Mexican Rice Dish

Directions

  1. 1Add enough oil to your pan to cover the bottom.
  2. 2Turn the heat to medium and add two cups of long grain rice.
  3. 3Stir the rice around constantly until it gets toasted and turns a light golden color.
  4. 4Once toasted, remove the rice from the pan and set it aside.
  5. 5Add one medium onion, two jalapeños, and about three chopped cloves of garlic to the pan.
  6. 6Add two pounds of fresh ground sirloin to the pan with the vegetables.
  7. 7Season with about a teaspoon each of Mexican oregano, black pepper, ground cumin, and chili powder.
  8. 8Cook until the meat is cooked through.
  9. 9Add one 10 1/2 oz can of pureed Ro-Tel to the pan.
  10. 10Add the toasted rice back into the pan.
  11. 11Add two tablespoons of chicken tomato bouillon.
  12. 12Pour in two cups of chicken broth.
  13. 13Bring the mixture back to a simmer, then put the lid on it for 15 minutes.
  14. 14Remove the pan from the heat, but do not remove the lid for another 10 minutes.
  15. 15Once done, fluff it up with a spatula.

  • 3 cloves of garlic
  • 2 pounds fresh ground sirloin
  • 1 teaspoon Mexican oregano
  • 1 teaspoon black pepper
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 can pureed Ro-Tel
  • 2 tablespoons chicken tomato bouillon
  • 2 cups chicken broth
