One Pot Mexican Rice Dish

Add enough oil to your pan to cover the bottom.

Turn the heat to medium and add two cups of long grain rice.

Stir the rice around constantly until it gets toasted and turns a light golden color.

Once toasted, remove the rice from the pan and set it aside.

Add one medium onion, two jalapeños, and about three chopped cloves of garlic to the pan.

Add two pounds of fresh ground sirloin to the pan with the vegetables.

Season with about a teaspoon each of Mexican oregano, black pepper, ground cumin, and chili powder.

Cook until the meat is cooked through.

Add one 10 1/2 oz can of pureed Ro-Tel to the pan.

Add the toasted rice back into the pan.

Add two tablespoons of chicken tomato bouillon.

Pour in two cups of chicken broth.

Bring the mixture back to a simmer, then put the lid on it for 15 minutes.

Remove the pan from the heat, but do not remove the lid for another 10 minutes.

Once done, fluff it up with a spatula.

1 teaspoon ground cumin
1 teaspoon chili powder
1 can pureed Ro-Tel
2 tablespoons chicken tomato bouillon
2 cups chicken broth
