Boil water.

Add half of a yellow onion, two bay leaves, leftover garlic, and one spoon of chicken bouillon to the boiling water.

Add three chicken breasts to the water and cook until done.

Shred the cooked chicken.

Boil about 12 tomatillos and five serranos.

As soon as the tomatillos change color, take them out, do not let them bust.

Take out the serranos.

Add some oil to a pan.

Add some diced up yellow onion to the pan and sauté for a few seconds.

Add the shredded chicken to the pan.

Add about one cup of the chicken broth (where the chicken was cooked).

Add some cumin and some tomato bouillon.

Mix everything around.

Transfer everything from the pan into a blender.

Add a handful of cilantro, three spoons of sour cream, cream cheese, some black pepper, some salt, and three garlic cloves to the blender.

Add some of the chicken broth (where the chicken was boiled) to the blender.

Blend the ingredients to make the sauce.

Let the sauce come to a simmer.

Add tortillas into oil.

Add some sauce to the bottom of the pan.

Dip each tortilla in the sauce.

Add some chicken and some cheese to each tortilla.

Roll the tortillas.

Repeat the process for the rest of the tortillas.

Add more sauce on top of the rolled enchiladas.

Add more cheese on top.

Bake at 350 degrees Fahrenheit until the cheese melts.

Serve the enchiladas with rice, beans, lettuce, sour cream, tomato slices, avocado slices, and queso fresco.

Tips
Do not let the tomatillos bust, if not, your sauce will taste very bitter.
You can also broil the enchiladas to get the top crispy.
