High Protein Cheesy Garlic Chicken Rolls

Directions

  1. 1Dice the chicken breast into cubes.
  2. 2Add garlic powder, onion powder, smoked paprika, cayenne, salt, and pepper to the diced chicken.
  3. 3Mix the chicken and seasonings well to coat.
  4. 4For the garlic sauce, combine cottage cheese, Greek yoghurt, light mayo, roasted garlic paste, lemon juice, honey, salt, black pepper, and onion powder in a blender.
  5. 5Blend the mixture until completely smooth.
  6. 6Add the seasoned chicken to a pan with cooking spray and cook on high heat until golden brown.
  7. 7Place the cooked chicken in a bowl.
  8. 8Pour the garlic sauce over the chicken.
  9. 9Add grated cheddar and mozzarella.
  10. 10Add chopped parsley.
  11. 11Mix all ingredients together to form the filling.
  12. 12On a warm tortilla, add 1/8 of the chicken mix.
  13. 13Roll up the tortilla tightly, repeating until you have 8 rolls.
  14. 14Place the rolls on a baking sheet lined with parchment paper.
  15. 15Give the rolls a quick spray with cooking spray.
  16. 16Sprinkle with parsley.
  17. 17Oven bake or air fry at 200°C for 8-10 minutes.
  18. 18Store the cooked rolls in the freezer wrapped in foil.

  • 1 tsp honey
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp onion powder
  • cooking spray
  • 80 g cheddar
  • 80 g mozzarella
  • chopped parsley
  • 8 tortillas

Tips

  • Wrap in foil and store in the freezer for months.
  • To reheat, unwrap from the foil, wrap in a paper towel and run under water, squeeze off the excess and microwave for 5-6 minutes, unwrap carefully from the paper towel and air-fry or toast in the pan for a couple of minutes to get crispy and enjoy.
