One Pot Chicken Gnocchi Soup

Directions

  1. 1Generously season chicken chest with salt, pepper, garlic powder, cayenne pepper, red pepper flakes, thyme, oregano, and dried basil.
  2. 2Finally dice a large shallot.
  3. 3Crush and roughly chop some garlic.
  4. 4In a heavy bottom pot over medium high heat, add a generous amount of olive oil.
  5. 5Carefully lay in your chicken. If your pot isn't big enough, do a couple batches to avoid overcrowding.
  6. 6Once the chicken is fully cooked, remove it and either chop it or shred it.
  7. 7Add a little more olive oil to the pot, then add the garlic and shallots.
  8. 8Squeeze in a little bit of tomato paste.
  9. 9Add in a little bit of sun-dried tomatoes.
  10. 10After a few minutes, add a whole lot of chicken stock.
  11. 11After about 15 minutes, add in the heavy cream and a good amount of Parmigiano cheese.
  12. 12Let it simmer to thicken up.
  13. 13After about 20 minutes, salt to taste, add in cold butter, your chicken, gnocchi, and a handful of spinach.
  14. 14Cover and let it cook for 5 more minutes.

  • garlic, crushed and roughly chopped

  • sun-dried tomatoes
  • chicken stock
  • heavy cream
  • Parmigiano cheese
  • cold butter
  • gnocchi
  • 1 handful spinach

Tips

  • Season chicken generously, adding more if you can still see chicken.
  • If your pot isn't big enough, cook chicken in batches to avoid overcrowding.
  • Chop or shred cooked chicken.
