Salmon and Orzo Dish

Directions

  1. 1In a pan over medium high heat, add some olive oil.
  2. 2Season your salmon fillets with your preferred seasoning.
  3. 3Add your salmon to your pan and cook for about 4 minutes on each side.
  4. 4After 8 minutes, set the salmon aside.
  5. 5In the same pan, add one chopped onion and minced garlic.
  6. 6Let the onion and garlic cook until the onions are soft.
  7. 7Add one cup of orzo, two cups of chicken broth, and a quarter cup of milk.
  8. 8Season with salt and pepper to taste.
  9. 9Turn the heat up high and get it boiling.
  10. 10Once boiling, cover and reduce heat to simmer.
  11. 11Cook for about 12 to 15 minutes.
  12. 12In the last 5 minutes of cooking, add some Parmesan cheese, nutritional yeast (optional), and some chopped up spinach.
  13. 13Mix together.
  14. 14Add the salmon back on top.
  15. 15Cover and let simmer for the rest of the cooking time.
  16. 16Make sure your salmon is cooked to at least 145 degrees.
