Cheesy Fiesta Potato Skillet

Directions

  1. 1Peel, wash potatoes, and cut up into cubes.
  2. 2Add the potatoes to a large bowl.
  3. 3Toss the potatoes with olive oil, salt, pepper, garlic powder, and paprika.
  4. 4Cook potatoes in the air fryer at 400 degrees for about 20-25 minutes shaking them around at least a couple times while they cook.
  5. 5Heat a skillet over medium high heat.
  6. 6Add the ground beef to the skillet and cook until browned.
  7. 7Drain any extra grease.
  8. 8Season with salt, cayenne, chili powder, cumin, paprika, dried cilantro, and black pepper.
  9. 9Add minced garlic and stir well.
  10. 10Once the potatoes and ground beef are cooked combine them together in the skillet and pour warmed up Queso over them.
  11. 11Top with fresh cilantro.
  12. 12Top each plate with some sour cream and Pico de Gallo.

  • 1 lb ground beef
  • 0.5 tsp salt
  • 0.5 tsp pepper
  • 0.25 tsp cayenne
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp dried cilantro
  • 1 tbsp minced garlic
  • 1.5 cups microwaved white Queso
  • Sour Cream
  • Pico de Gallo
  • Fresh cilantro

Tips

  • If you don’t have an air fryer, you can cook the potatoes in the oven at 400 degrees for about 30 minutes, stirring halfway through.
  • You can use one pound of chicken instead of ground beef.
  • Any microwavable white cheese dip can be used.
  • Russet potatoes are recommended.
  • Homemade or store-bought Pico de Gallo can be used, or taco sauce as an alternative.
