Hambagu

Directions

  1. 1Sauté finely chopped onions until soft and golden, then set aside to cool.
  2. 2In a bowl, combine ground beef and pork.
  3. 3Add the cooled sautéed onion, one beaten egg, panko breadcrumbs soaked in a bit of milk, salt, pepper, and just a pinch of nutmeg to the bowl with the meat.
  4. 4Mix it gently enough to bring it together without overworking it.
  5. 5Add mayonnaise to the mixture.
  6. 6Sear both sides of the patties until nice and golden brown.
  7. 7Set the patties aside and use the same pan to make your sauce.
  8. 8Add two tablespoons ketchup, one tablespoon Worcestershire, and one tablespoon soy sauce to the pan juices.
  9. 9Mix the sauce up and pour it over the patties.
  10. 10Serve the hambagu with warm rice and shredded cabbage.

  • 200 g Ground Beef
  • 100 g Ground Pork
  • 0.5 Minced Onion
  • 1 Egg
  • 0.5 cup Panko breadcrumbs
  • 2 T Milk
  • Salt
  • Pepper
  • 1 pinch Nutmeg
  • 1 T Mayonnaise
  • 2 tablespoons Ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Soy sauce

Tips

  • Mayonnaise is commercially emulsified fat so it's going to actually help keep that meat juice inside while you cook it.
