- 1Boil the potatoes with salt.
- 2Chop the red onion.
- 3Chop the fresh parsley.
- 4Peel the potatoes while they are still hot.
- 5Chop the potatoes.
- 6In a bowl, mix the potatoes, red onion, fresh parsley, tuna, salt, chopped hard boiled eggs, sherry vinegar and olive oil.

Tips
- Dress the salad up when the potatoes are still hot so they absorb the dressing.
- Let it chill before eating to get the real result.
- Tuna is optional, and actually in the south it is more common to find this tapa with melva instead
