Sopa Fría Ensalada de Coditos

Directions

  1. 1Set a pot with 8 cups of water on the stove and bring it to a boil.
  2. 2Add some oil to the boiling water.
  3. 3Add some salt to the boiling water.
  4. 4Add one 16 oz bag of sopa de coditos (elbow macaroni) to the boiling water.
  5. 5Give the pasta a mix.
  6. 6Cook the pasta until soft (approximately 12 minutes).
  7. 7Drain the cooked pasta using a strainer.
  8. 8Rinse the pasta with cold water to cool it off faster.
  9. 9Transfer the cooled pasta into a large bowl.
  10. 10Add 10 oz of diced ham to the pasta.
  11. 11Add 15 oz of canned corn to the pasta.
  12. 12Add some pickled carrots and pickled jalapeños to the pasta.
  13. 13Add 2 tablespoons of sour cream to the mixture.
  14. 14Add 3 tablespoons of mayonnaise to the mixture.
  15. 15Season with salt to taste.
  16. 16Season with pepper to taste.
  17. 17Mix all the ingredients thoroughly until well combined.
  18. 18Serve the sopa fria on tostadas.
  19. 19Optionally, add some hot sauce on top before eating.
