Add salt to some boiling water.

Add some vinegar to the boiling water to help the eggs peel.

Carefully drop eggs into the boiling water, do not just throw them in to prevent cracking.

Immediately set a timer for 7 minutes for a perfect soft egg; for a runnier yolk, set for 6 minutes.

After about a minute of cooking, gently create a vortex in the water by stirring to keep the yolk in the center of the egg.

After 7 minutes, remove the eggs and put them straight into an ice bath.

Leave the eggs in the ice bath while preparing the sauce.

Pour Mirin into a tall quart container; if not available, use rice vinegar and a tablespoon of sugar.

Add soy sauce to the container.

Tips
Boiling room temperature eggs peel the easiest.
If you don't plan ahead, soak eggs in hot tap water (not hot enough to cook) to bring down their temperature.
Gently create a vortex while eggs are boiling to keep the yolk in the center.
