Directions

  1. 1Add salt to some boiling water.
  2. 2Add some vinegar to the boiling water to help the eggs peel.
  3. 3Carefully drop eggs into the boiling water, do not just throw them in to prevent cracking.
  4. 4Immediately set a timer for 7 minutes for a perfect soft egg; for a runnier yolk, set for 6 minutes.
  5. 5After about a minute of cooking, gently create a vortex in the water by stirring to keep the yolk in the center of the egg.
  6. 6After 7 minutes, remove the eggs and put them straight into an ice bath.
  7. 7Leave the eggs in the ice bath while preparing the sauce.
  8. 8Pour Mirin into a tall quart container; if not available, use rice vinegar and a tablespoon of sugar.
  9. 9Add soy sauce to the container.
  10. 10Add bone broth to the container; water can also be used as an alternative.
  11. 11To peel the eggs, gently tap the top and bottom with a small spoon.
  12. 12Take the spoon and gently shove it under the shell for a clean peel.
  13. 13Once peeled, place the soft eggs into the sauce container, ensuring they sink and are fully submerged.
  14. 14Cover the container with a lid and place it in the fridge.
  15. 15Marinate the eggs overnight or for at least 4 hours.
  16. 16Take an egg out and slice it to show the perfect soft yolk and even marination.
  17. 17Serve the marinated eggs on top of instant noodles or rice, or eat them by themselves.

Tips

  • Boiling room temperature eggs peel the easiest.
  • If you don't plan ahead, soak eggs in hot tap water (not hot enough to cook) to bring down their temperature.
