Cook the ramen noodles according to package directions, adding the bok choy for the last 1–2 minutes.

Just before draining, reserve 3/4 cup of the hot noodle water.

In a serving bowl, add the Kewpie, Bachan’s, chili oil, heavy cream, egg yolk, and mushroom dashi.

Immediately add 1/2 cup of the hot noodle water and mix until smooth and creamy.

Add more hot noodle water as needed, up to 3/4 cup.

Add the noodles, bok choy, and tofu to the bowl.

Top with the boiled egg, scallion, more chili oil, and black sesame seeds.

1 serving ramen noodles
2 tbsp Kewpie mayonnaise
1 tbsp Bachan’s Original Japanese Barbecue Sauce
1 tbsp chili oil
2 tbsp heavy cream
1 whole egg yolk
1 tsp mushroom dashi powder
1/2–3/4 cup hot noodle water
4 oz soft tofu, cut into pieces
1 whole baby bok choy
1 whole boiled egg, halved
1 whole scallion, sliced
black sesame seeds (optional)
to taste chili oil (optional)
