15-Minute Beef & Ramen Noodles (1-Pan!)

Directions

  1. 1Heat a large, high-sided skillet or Dutch oven over medium-high heat.
  2. 2Add olive oil and ground beef, break apart the meat into small chunks, and cook for 3 minutes until beginning to brown.
  3. 3Add salt and garlic, and cook until the meat is no longer pink, about 2-3 more minutes, stirring frequently.
  4. 4Add tamari, stock, and sugar.
  5. 5Turn the heat to high and bring to a strong simmer.
  6. 6Add the ramen noodles and cook for 2-3 minutes, or until the noodles begin to soften but are not fully cooked, flipping the ramen several times to evenly coat the noodles in the broth.
  7. 7Add the slaw and the carrots, stirring to combine.
  8. 8Cook an additional 2-3 minutes for the noodles to cook completely and the vegetables to soften.
  9. 9Serve immediately with toppings, if desired.

  • 0.25 cup low-sodium tamari (or soy sauce)
  • 1.5 cup chicken stock
  • 2 teaspoons brown sugar
  • 2 (3-oz) packages ramen noodles, flavoring packets discarded or saved for another use
  • 9 - oz slaw mix
  • 1 cup shredded carrots
