Beef Drunken Noodles

Directions

  1. 1Slice the beef sirloin.
  2. 2Place the sliced beef on a metal tray.
  3. 3Sprinkle bicarbonate of soda over the beef and let it marinate.
  4. 4Rinse off the bicarbonate of soda from the beef.
  5. 5Heat oil in a pan.
  6. 6Fry the beef until it has a good color, then remove it from the pan.
  7. 7Add sliced onions, peppers, minced garlic, and birds eye chilies to the pan and fry them.
  8. 8In a bowl, mix oyster sauce, light soy sauce, dark soy sauce, sugar, and water.
  9. 9Return the beef to the pan with the fried vegetables.
  10. 10Add spring onions and MSG to the pan.
  11. 11Pour the prepared sauce into the pan and mix.
  12. 12Add several handfuls of whole Thai basil leaves.
  13. 13Add cooked wide rice noodles to the pan.
  14. 14Mix everything through until the noodles are coated and glossy.
  15. 15Serve the noodles on a plate.
  16. 16Sprinkle with sesame seeds for garnish.

Tips

  • To ensure the beef is soft and succulent, use the velveting technique: marinate the meat in bicarb for a while, then rinse it off before frying.
  • Use milder chilies if you prefer less spice.
