Olympic Gold Chocolate Muffins

Directions

  1. 1Combine butter, oil, sugar, vanilla extract, and eggs and cream together.
  2. 2Add one box of Jell-O chocolate instant pudding to the mixture and mix again.
  3. 3In a separate bowl, whisk together flour, cocoa powder, baking soda, baking powder, and a dash of salt.
  4. 4Add the dry ingredients to the moist ingredients.
  5. 5Mix on low until almost combined.
  6. 6Add 1/3 cup of milk and 1 cup of sour cream to the mixture.
  7. 7Add 2 ounces of semi-sweet chocolate chunks and three-quarters of a bag of mini semi-sweet chocolate chips to the mixture and stir to combine.
  8. 8Chill the muffin batter in the fridge.
  9. 9Using an ice cream scoop, fill muffin cups with batter.
  10. 10Add a few more mini chocolate chips to the top of each muffin.
  11. 11Bake in the oven at 400 degrees Fahrenheit for 5 minutes, then reduce the temperature to 325 degrees Fahrenheit for approximately 20 additional minutes.
  12. 12Remove the center of each muffin using a muffin corer or a small paring knife.
  13. 13Melt 1 and a quarter cup of semi-sweet chocolate and 1 can of sweetened condensed milk in the microwave for approximately 90 seconds, stirring every 30 seconds. Add 1/2 teaspoon of vanilla extract.
  14. 14Whisk the melted chocolate mixture together.
  15. 15Pour the chocolate ganache into the holes of each muffin.

Tips

  • If you don't have a gadget to pop out the muffin center, use a small paring knife to cut a hole for the filling.
