Add 4 ounces of cream cheese, 1 cup of brown sugar, half a cup of butter, and approximately 1 teaspoon of vanilla extract to a saucepan.
Add 15 ounces of pumpkin to the saucepan with the other ingredients.
Heat the mixture in the saucepan on medium to medium-high heat, stirring until all ingredients are melted.
Grab three standard-sized cans of cinnamon rolls.
Cut the cinnamon rolls into quarters.
Put the cut cinnamon rolls into a bag (a bread bag or a large ziplock bag can be used).
Add half a cup of regular sugar to the bag with the cinnamon rolls.
Add two tablespoons of pumpkin pie spice to the bag.
Close the bag and shake it to mix all the ingredients well.
Take half of the mixed cinnamon roll quarters and arrange them in the bottom of a bundt pan that has been sprayed with non-stick spray or coated with shortening.
Pour half of the melted pumpkin mixture over the cinnamon rolls in the bundt pan.
Add the remaining cinnamon roll quarters to the bundt pan.
Pour the remaining pumpkin mixture over the cinnamon rolls.
Bake in the oven at 350 degrees Fahrenheit for approximately 35 minutes, or until fully cooked through.
Once baked, remove from the oven and let it fully cool before flipping the bundt pan to release the monkey bread.
Add the icing that came with the cinnamon rolls on top of the pumpkin monkey bread.
