Murtabak

Directions

  1. 1Cut the murtabak into smaller pieces.
  2. 2Add flour, oil, salt and water into a bowl.
  3. 3Knead the dough and let it rest for at least one hour.
  4. 4Saute the onions and add spices and tomato purée.
  5. 5Add chicken mince and cook until completely cooked.
  6. 6Let the filling completely cool, then mix in eggs, chopped coriander and spring onions.
  7. 7Divide the dough into portions.
  8. 8Roll out each ball of dough as thinly as possible on a greased surface.
  9. 9Add filling and mozzarella cheese.
  10. 10Fold the dough to make a square.
  11. 11Pan-fry over low heat until golden brown.

  • 3 cups plain flour
  • 4 tbsp oil
  • 0.5 tsp salt
  • 1 cup hot water
  • 2 tbsp oil
  • 1 small onion
  • 400 g chicken mince
  • 1 tsp garlic ginger paste
  • 1 tbsp tomato purée
  • 1 tsp red chilli powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 0.5 tsp garam masala
  • 1 tsp salt
  • 2 eggs
  • 2 spring onions
  • 2 tbsp chopped coriander
  • shredded Mozarella

Tips

  • It can be made with lamb or beef mince instead of chicken.
  • Let the dough rest for at least 1 hour for a more elastic dough.
