Directions

  1. 1Trim off any silver skin or fat from your eye of round steak.
  2. 2Cut the beef in half and put it in the freezer for half an hour to firm up a bit so it is easier to slice.
  3. 3Slice the beef into thin strips.
  4. 4Prepare the marinade by combining maple syrup, soy sauce, whiskey, sesame oil, chili flakes, smoked paprika, garlic powder, rosemary, thyme, and ginger in a mason jar.
  5. 5Add the sliced beef to the marinade in the mason jar, mix it around, and put it in the fridge for 24 hours.
  6. 6Halfway through marinating, flip the beef to ensure even marination.
  7. 7Lay out the marinated beef strips onto a wire rack.
  8. 8Season the beef strips with a little bit of barbecue seasoning.
  9. 9Place the wire rack with the beef strips in a smoker at 200 degrees for about 5 hours, or until the jerky is leathery and bendable.

Tips

  • Placing the beef in the freezer for half an hour helps to firm it up, making it easier to slice thinly.
  • The jerky is done when it is leathery to the touch and bendable. The timing will depend on how thick you want your beef jerky.
  • Flip the meat halfway through the marinating process to ensure everything gets marinated nicely.
