High Protein Nacho Beef Loaded Fries

Directions

  1. 1Slice the potatoes into thin fries.
  2. 2Add taco seasoning mix and olive oil to the sliced potatoes.
  3. 3Mix the potatoes well.
  4. 4Oven bake or air fry the potatoes for 20-25 minutes at 200°C / 400°F until golden and crispy.
  5. 5Cook the beef in light butter for 5-7 minutes on high heat until fully brown.
  6. 6Add extra taco seasoning, tomato paste, chopped jalapenos, and jalapeno juice to the beef.
  7. 7Mix and cook for 2 minutes until the beef is juicy.
  8. 8Set the cooked beef aside.
  9. 9Add light evaporated milk, light cheese slices, and sharp cheddar to a pan.
  10. 10Mix until the cheese sauce is completely smooth and cheesy.
  11. 11Prepare the fresh side salad by combining chopped tomatoes, red onion, red and green bell peppers, cubed avocados, fresh coriander, lime juice, honey, salt, and pepper in a bowl.
  12. 12Mix the salad ingredients well.
  13. 13Serve the cooked fries, beef, and side salad, then drizzle with nacho cheese sauce.

  • 1 serving Taco Seasoning Mix
  • 2 Tsp Olive Oil
  • 800 g Minced Beef
  • 1 serving Taco Seasoning

  • 20 ml Jalapeno Juice

  • 150 g Tomatoes Chopped
  • 100 g Red Onion Chopped
  • 150 g Red & Green Bell Peppers Chopped
  • 200 g Avocados Cubed
  • 25 g Fresh Coriander Chopped
  • 1 Lime juice
  • 15 g Honey
  • 1 Tsp Salt
  • 1 Tsp Black Pepper
  • 1 Tsp Salt

  • 1 Tsp Garlic Powder
  • 1 Tsp Onion Powder
  • 1 Tsp Paprika
  • 0.5 Tsp Chilli Powder
  • 1 Tsp Oregano
  • 1 Tsp Cumin
  • 15 ml Jalapeno Juice

Tips

  • Cook the beef for 5-7 minutes on high heat until fully browned, use a spatula to break it up then add all the spices, tomato paste, and jalapenos.
  • Mix the beef for another 2-3 minutes until it gets golden brown.
  • Make the nacho cheese sauce on low heat, mix on low heat until it thickens and becomes cheesy.
  • You can store this sauce in a bottle, but you’ll have to heat it up again to use as it will harden once cooled.
  • Store the side salad in a separate container then serve when ready to eat. It can last for 4-5 days!
  • Reheat the beef and fries in a pan or if you want the fries crispier just air fry for 4-5 minutes.
