Add diced red bell pepper, orange bell pepper, yellow onion, and yellow potatoes to a sheet pan.
Season with salt, pepper, and olive oil, then toss to coat.
Bake at 450 degrees Fahrenheit for approximately 30 minutes, or until softened and browned.
Once the vegetables are done, add 16oz of 93% beef or ground turkey right over the top.
Add seasoning blend on top of the meat.
Bake for 5 minutes.
Once the meat is browned and cooked through, pour over a blended mixture of egg whites, eggs, cottage cheese, and corn starch.
Top off with shredded cheddar cheese.
Toss back in the oven and bake at 400 degrees Fahrenheit for 25-30 minutes, or until the center is firm.
Slice the entire sheet pan creation into 10 equally sized rectangles.
Add a rectangle of the mixture to a burrito-sized tortilla, along with the high protein cream sauce (made from Greek yogurt and hot sauce) and a little bit of cilantro.
Roll the burritos.
Wrap individual burritos in parchment paper and store frozen.
To reheat, place a wrapped burrito in the microwave for 3-4 minutes, flipping halfway.
Optionally, place the reheated burrito on a pan over medium-high heat for 1-2 minutes per side to crisp the tortilla.
