Texas Trash Chicken Casserole

Directions

  1. 1Cover the bottom of a 9x13 baking dish with enchilada sauce.
  2. 2Scoop refried beans into the enchilada sauce.
  3. 3Add chicken thighs on top of each scoop of refried beans.
  4. 4Season the chicken thighs with taco seasoning.
  5. 5In a mixing bowl, combine a block of softened cream cheese, a can of diced green chiles, a cup of shredded cheese, a quarter cup of jarred salsa or enchilada sauce, and a tablespoon of taco seasoning.
  6. 6Mix all the ingredients in the bowl until beautifully combined.
  7. 7Scoop the mixture from the bowl onto each chicken thigh.
  8. 8Spread the mixture out to completely cover the chicken.
  9. 9Bake in the oven at 350 degrees Fahrenheit for about 30 minutes.
  10. 10Once out of the oven, add a handful of cheese.
  11. 11Return to the oven for a couple of minutes to melt the cheese and cook the chicken.
  12. 12Garnish with green onions, if available.
  13. 13Serve with homemade Spanish rice and a little extra sauce.
