Green Enchiladas

Directions

  1. 1Place four chicken breasts into the crockpot.
  2. 2Add one jar of salsa to the chicken in the crockpot.
  3. 3Add minced dehydrated onion to the crockpot.
  4. 4Add approximately 1.5 metric tons (a metric ton and a half) of jarred garlic to the crockpot.
  5. 5Add one to two packets of taco seasoning to the crockpot.
  6. 6Stir the contents of the crockpot well.
  7. 7Cover the crockpot and cook on high for four hours.
  8. 8Once cooked, remove the chicken from the crockpot and shred it using two forks.
  9. 9Reserve about a cup of the cooking liquid from the crockpot.
  10. 10Melt some butter in a saucepan.
  11. 11Add two cups of rice to the melted butter and toast it.
  12. 12Add approximately one cup of the reserved salsa liquid from the crockpot into the rice.
  13. 13Add two cups of water and then an additional one and a half cups of water to the rice.
  14. 14Cover the rice and allow it to cook.
  15. 15Pour one jar of salsa verde into a separate pan.
  16. 16Add approximately one cup of sour cream to the salsa verde.
  17. 17Whisk the salsa verde and sour cream together, then turn on the heat and simmer for a minute or two.
  18. 18Spray a casserole dish with cooking spray.
  19. 19Pour some green enchilada sauce into the bottom of the casserole dish.
  20. 20Take a flour tortilla and fill it with shredded chicken and some cheese.
  21. 21Roll each filled enchilada and place it into the casserole dish.
  22. 22Top the enchiladas with more green enchilada sauce.
  23. 23Cover the enchiladas generously with shredded cheese.
  24. 24Bake the enchiladas in an oven until they are golden brown and bubbly.
  25. 25Serve the green chicken enchiladas with rice.

Tips

  • Wash your hands after touching raw meat.
  • Don't overdo cooking in the slow cooker; most dishes don't need to cook all day.
