Peanut Tofu Satay

Directions

  1. 1Cut the tofu into halves.
  2. 2Cut the tofu into planks, then cube it.
  3. 3Skewer the tofu cubes, spacing them evenly.
  4. 4Dress the skewered tofu with olive oil, salt, and pepper.
  5. 5Sear the tofu in a hot cast iron pan until golden brown.
  6. 6In a bowl, combine ingredients for the peanut sauce: coconut milk, maple syrup, sesame oil, ginger, and peanut butter, then whisk until combined.
  7. 7Pour most of the peanut sauce over the seared tofu.
  8. 8Allow the sauce to thicken and brown the tofu evenly on all sides.
  9. 9Chop cilantro and crush peanuts.
  10. 10Plate the tofu over rice and garnish with scallions, sesame seeds, chopped cilantro, and chili oil.
