Ekadashi Potato Pancake

Directions

  1. 1Peel the potatoes.
  2. 2Cut the peeled potatoes into large chunks.
  3. 3Add water to a pot and bring to a boil.
  4. 4Add the potato chunks to the boiling water.
  5. 5Boil the potatoes until tender.
  6. 6Check if the potatoes are cooked by piercing them with a knife.
  7. 7Drain the boiled potatoes using a strainer.
  8. 8Transfer the drained potatoes to a bowl.
  9. 9Mash the potatoes thoroughly.
  10. 10Add salt to the mashed potatoes.
  11. 11Add black pepper powder to the mashed potatoes.
  12. 12Add arrowroot powder to the mashed potatoes.
  13. 13Mix the ingredients thoroughly with a spatula until a dough-like consistency is formed.
  14. 14Heat olive oil in a pan.
  15. 15Add chili flakes to the hot oil.
  16. 16Add oregano to the pan.
  17. 17Add black pepper powder to the pan.
  18. 18Add cumin powder to the pan.
  19. 19Grate ginger directly into the pan.
  20. 20Sauté the spices and ginger.
  21. 21Add chopped spinach to the pan.
  22. 22Sauté the spinach until it wilts.
  23. 23Grate paneer into the pan with the spinach.
  24. 24Add salt to the spinach and paneer mixture.
  25. 25Mix well until combined.
  26. 26Take a portion of the mashed potato mixture.
  27. 27Flatten the potato mixture in your palm to form a cup shape.
  28. 28Fill the potato cup with the spinach and paneer mixture.
  29. 29Close the potato mixture around the filling to form a patty.
  30. 30Gently flatten the patty.
  31. 31Heat sunflower oil in a frying pan.
  32. 32Place the potato patties into the hot pan.
  33. 33Cook until golden brown on both sides.
  34. 34Remove the cooked potato pancakes from the pan.
  35. 35Slice the potato pancake in half.
  36. 36Serve the Ekadashi Potato Pancake.

  • 1 inch Grate ginger
  • 200 grams Chopped spinach
  • 100 grams Paneer
  • 0.5 Tsp Salt
  • Sunflower oil
