Directions

  1. 1Combine silken tofu, black salt, chickpea flour, water, baking powder, and turmeric in a blender or processor to create the batter.
  2. 2Heat a pan over medium heat and grease it with vegan butter.
  3. 3Pour the batter into the pan and cook until set.
  4. 4Fold the corners of the egg into the center.
  5. 5If it seems too flimsy to flip, turn the heat down and let it cook longer to improve the structure.

  • 125 g silken tofu
  • 1/4 tsp black salt
  • 1/2 cup chickpea flour
  • 1/2 cup water
  • 1/8 tsp baking powder
  • 1/8 tsp turmeric (optional)
  • vegan butter

Tips

  • Silken tofu water content varies by brand, so you may need to adjust the water amount slightly.
  • First-timers should ensure the pan isn't too hot and use plenty of butter.
  • If you want a stronger 'eggy' flavor, sprinkle additional black salt on top after cooking as some flavor can cook out.
  • Black salt (kala namak) provides the signature sulfurous, umami flavor.
