To make chowmein, first boil water in a pot.

Once the water boils, add the chowmein and stir it well.

Check the chowmein periodically; it's cooked when the thin white line in the middle disappears.

Once cooked, quickly transfer the chowmein to a basket to drain the water.

Pour cold water over the chowmein to cool it down quickly.

Spread the chowmein out in an open space and apply oil to it.

Let the chowmein sit for at least 30 minutes to an hour to dry thoroughly.

Heat a little oil in a pan.

Add garlic, chopped onion, and capsicum to the pan and lightly fry them.

Add carrots and cabbage to the pan and sauté lightly.

Add the prepared chowmein to the pan.

Add salt, Ajinomoto, black pepper, chowmein masala, soy sauce, and orange red food color.

Add tomato ketchup, green chili sauce, vinegar, and red chili paste.

Mix all the ingredients thoroughly.

Add mixed coriander and spring onion.

Lightly mix once more.

Tips
After boiling, rinse chowmein with cold water to cool quickly.
Spread chowmein and apply oil, then let it dry for 30 minutes to an hour.
