Peel and cut a few large russet potatoes into cubes.
Place the cubed potatoes in a bowl.
Add olive oil, salt, pepper, garlic, and paprika to the potatoes.
Shake the bowl to coat the potatoes evenly with the seasonings.
Transfer the seasoned potatoes to an air fryer basket.
Air fry the potatoes at 400 degrees Fahrenheit for about 25 minutes, shaking them around at least a couple of times while they cook.
While the potatoes are cooking, melt butter in a skillet over medium-high heat.
Cut one pound of chicken breasts into bite-sized pieces, ensuring to remove any undesirable spots.
Add the chicken to the skillet with melted butter and season with 1/2 tsp each of salt and pepper, and 1 tsp each of paprika, onion powder, and Italian seasoning.
Cook the chicken until it's done.
Add 2 tablespoons of minced garlic and Buffalo Wild Wings Parmesan Garlic Sauce to the cooked chicken and stir everything together.
Stir in the crispy potatoes with the chicken.
Top the mixture with shredded mozzarella cheese.
Broil in the oven for a couple of minutes until the cheese is melted.
Serve and enjoy, topping with dried parsley and more Parmesan Garlic sauce if needed.
