Mix marshmallow root powder and water together and let it sit for at least five minutes to infuse. You can also let it sit overnight in the fridge.
Strain the marshmallow root water through cheesecloth or a strainer.
Add half of the strained water to a pot and combine with honey. Whisk and heat on the stove until the mixture reaches 240 degrees.
In a stand mixer, add the beef gelatin and the remaining half of the marshmallow root water. Stir to combine and let sit while the honey and water boils.
Begin mixing the gelatin and water mixture on low speed.
Slowly pour the boiling honey mixture into the mixer. Once all is added, turn the speed up to medium, then to high and whip until the mixture is white and stiff.
Add vanilla, if desired, and continue beating just until it reaches soft peaks.
Spread the mixture onto a parchment-lined pan and allow to cool and set, which can be speeded up by placing the pan in the fridge.
Once firm, use a pizza cutter or knife to cut the marshmallow sheet into squares.
