Boil green peas with 1 tsp salt and 1 tsp sugar.

In a bowl, mix wheat flour, fine semolina, carrom seeds, ajwain, salt and oil.

Add water and make a soft dough. Cover and let it rest for half an hour.

Grind ginger, garlic, green chillies, coriander leaves, fennel seeds, black pepper, cumin seeds into a coarse paste.

In a pan, heat ghee and add asafoetida. Then add the prepared paste and sauté lightly.

Add boiled green peas and mash them using a potato masher.

Add salt, sugar powder, amchur, garam masala, chopped cashew and raisins. Mix well and cook for 2-3 minutes.

Make small balls of the pea mixture. Roll out the dough into small circles and place the pea balls in the center. Seal tightly to form kachoris.

Heat oil in a pan. Fry kachoris on low flame until golden brown. Increase heat for the last minute for a nice color.

1 cup Water
1 inch Ginger
8 cloves Garlic
2 Green chilli
1 handful Coriander leaves stems
1 tsp Fennel seeds
0.5 tsp Black pepper
1 tsp Cumin seeds
1 tsp Ghee
1 pinch Asafoetida
1 tsp Sugar powder
1 tsp Amchur
0.5 tsp Garam masala
2 tbsp Chopped cashew
2 tbsp Raisins
