Matar Kachori with Wheat Flour

Directions

  1. 1Boil green peas with 1 tsp salt and 1 tsp sugar.
  2. 2In a bowl, mix wheat flour, fine semolina, carrom seeds, ajwain, salt and oil.
  3. 3Add water and make a soft dough. Cover and let it rest for half an hour.
  4. 4Grind ginger, garlic, green chillies, coriander leaves, fennel seeds, black pepper, cumin seeds into a coarse paste.
  5. 5In a pan, heat ghee and add asafoetida. Then add the prepared paste and sauté lightly.
  6. 6Add boiled green peas and mash them using a potato masher.
  7. 7Add salt, sugar powder, amchur, garam masala, chopped cashew and raisins. Mix well and cook for 2-3 minutes.
  8. 8Make small balls of the pea mixture. Roll out the dough into small circles and place the pea balls in the center. Seal tightly to form kachoris.
  9. 9Heat oil in a pan. Fry kachoris on low flame until golden brown. Increase heat for the last minute for a nice color.

  • 3 tbsp Oil
  • 1 cup Water
  • 1 inch Ginger
  • 8 cloves Garlic
  • 2 Green chilli
  • 1 handful Coriander leaves stems
  • 1 tsp Fennel seeds
  • 0.5 tsp Black pepper
  • 1 tsp Cumin seeds
  • 1 tsp Ghee
  • 1 pinch Asafoetida
  • 1 tsp Sugar powder
  • 1 tsp Amchur
  • 0.5 tsp Garam masala
  • 2 tbsp Chopped cashew
  • 2 tbsp Raisins
