Directions

  1. 1Whisk flour, baking powder, and salt.
  2. 2Add cottage cheese, eggs, and oil and mix until a sticky dough forms.
  3. 3Mix in add-ins of choice.
  4. 4Let rest for 10 minutes.
  5. 5Preheat oven to 425℉ and line a large baking sheet with parchment paper.
  6. 6Scoop 12 equal portions of dough onto the baking sheet.
  7. 7Bake for 15-18 minutes or until lightly golden.
  8. 8Allow to cool before serving/storing.

Ingredients

  • 2 cups 2% cottage cheese, blended until smooth
  • 2.5 cups all purpose flour
  • 2 tsp baking powder
  • 1.5 tsp salt
  • 2 large eggs
  • 1 tbsp avocado oil
  • 2 cups low fat cheddar cheese, shredded
  • 2 jalapeños, to taste, seeded and diced
  • 1 tsp freshly cracked black pepper
  • 2 cups low fat cheddar cheese, shredded
  • 1.5 cups ham, diced (I use Butterball turkey ham)
  • 2 cups low fat cheddar cheese, shredded
  • 1 jalapeño peppers, to taste, seeded and diced
  • 5 green onions, thinly sliced
  • 8 strips bacon, cooked and crumbled (I use turkey bacon but any kind works)
  • 2 cups low fat mozzarella cheese, shredded
  • 1 bunch green onions, thinly sliced
