Whisk flour, baking powder, and salt.

Add cottage cheese, eggs, and oil and mix until a sticky dough forms.

Mix in add-ins of choice.

Let rest for 10 minutes.

Preheat oven to 425℉ and line a large baking sheet with parchment paper.

Scoop 12 equal portions of dough onto the baking sheet.

Bake for 15-18 minutes or until lightly golden.

Allow to cool before serving/storing.
Ingredients
2 cups 2% cottage cheese, blended until smooth
2.5 cups all purpose flour
2 tsp baking powder
1.5 tsp salt
2 large eggs
1 tbsp avocado oil
2 cups low fat cheddar cheese, shredded
2 jalapeños, to taste, seeded and diced
1 tsp freshly cracked black pepper
2 cups low fat cheddar cheese, shredded
1.5 cups ham, diced (I use Butterball turkey ham)
2 cups low fat cheddar cheese, shredded
1 jalapeño peppers, to taste, seeded and diced
5 green onions, thinly sliced
8 strips bacon, cooked and crumbled (I use turkey bacon but any kind works)
2 cups low fat mozzarella cheese, shredded
1 bunch green onions, thinly sliced
