Street Corn Pizza

Directions

  1. 1Add one egg to your can of corn.
  2. 2Add three tablespoons of corn starch to the can.
  3. 3Add a half teaspoon of salt to the can.
  4. 4Add some black pepper to the can.
  5. 5Add one teaspoon of paprika to the can.
  6. 6Add a pinch of oregano to the can.
  7. 7Dump the contents of the can into a bowl.
  8. 8Add some parsley by breaking it off with your hand into the bowl.
  9. 9Mix it all together in the bowl, breaking up the egg and mixing in the cornstarch and paprika.
  10. 10Dice a red bell pepper and add it to the mixture.
  11. 11Mix the red bell pepper into the mixture.
  12. 12Pour olive oil into a non-stick pan and heat it on medium to high heat.
  13. 13Add the corn, egg, parsley, and other ingredients mixture into the hot pan.
  14. 14Flatten out the mixture in the pan with a spatula, getting it up against the edges.
  15. 15Cover the pan with a lid and cook until set.
  16. 16Slide the cooked corn mixture onto the lid, then flip it over back into the pan to cook the other side.
  17. 17Add a generous amount of ketchup over the top of the corn mixture in the pan.
  18. 18Sprinkle freshly grated mozzarella cheese evenly over the ketchup.
  19. 19Chop up some green onion with scissors and sprinkle it over the cheese.
  20. 20Add one more pinch of oregano on top.
  21. 21Put the lid back on and let the cheese melt quickly.
  22. 22Slide the finished 'pizza' onto a cutting board.
  23. 23Cut the 'pizza' into four slices using a pizza cutter.
  24. 24Serve a slice on a plate once it has cooled slightly.

Tips

  • You can use smoked paprika if you like.
  • Break the parsley off with your hand, no need to chop.
  • You can use green pepper if you like instead of red bell pepper.
  • You can use veggie oil or canola oil instead of olive oil.
  • You could use pizza sauce instead of ketchup, but corn and egg says ketchup for this recipe.
  • Be careful not to get cheese on the edge to avoid burnt cheese.
  • You can use parsley, cilantro or even jalapeño instead of green onion.
