Take the bottom part from four leeks and cut them in half.

Make eight fine incisions. This will ensure a more even cooking process.

Transfer the leeks into a container and peel the peel from one lemon on top.

Season with salt, oil, and thyme.

Cover it tightly and bake them in an oven at 160 degrees Celsius for 70 minutes.

Remove the foil and let them cool down.

Remove the thyme, lemon peel, and the first layer of the leeks.

Place the leek on a piece of nori and roll it all around.

Cut the remaining nori sheet off and repeat this with all the other leeks.

Lay half of the covered leeks on a piece of wrap and zest some lemon zest on top.

Lay the remaining leeks on there and season those as well with some lemon zest.

Cover it completely with the wrap and roll it up as tight as possible.

Make a knot on both sides.

Let it set overnight in an ice bath in your fridge.

Portion it with a sharp knife.

Lay a slice on a plate and remove the foil.
