  1. 1Rinse the peas in a colander to remove any dirt.
  2. 2Cover the bowl and refrigerate overnight (or for 6-8 hours).
  3. 3Strain the peas and place them in a large pot the next day.
  4. 4Dice 1 green bell pepper.
  5. 5Dice 1 small yellow onion.
  6. 6In a skillet, add 1 tablespoon of olive oil.
  7. 7Add 1 tablespoon of butter to the skillet.
  8. 8Add the diced bell pepper and onion to the skillet.
  9. 9Add 3 teaspoons of minced garlic to the skillet.
  10. 10Cook for 3 minutes.
  11. 11In a large pot, add 2 boxes of chicken broth.
  12. 12Add the chopped onion and bell pepper mixture to the pot.
  13. 13Combine 1 teaspoon of black pepper, 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, and 1/2 teaspoon of smoked paprika in a bowl.
  14. 14Add the spice mixture to the pot.
  15. 15Add 1 lb of smoked turkey legs or ham hock to the pot.
  16. 16Cover and cook for 1 1/2-2 hours.
  17. 17After 90 minutes, remove the turkey leg bone.
  18. 18Let it cook for another hour.
