Crock Pot Broccoli Cheese Soup

Directions

  1. 1Add 4 cups of chopped fresh broccoli, 1 small diced sweet onion, 1 cup matchstick carrots, 1 small diced celery stock, and pepper to the crock pot.
  2. 2Pour in 4 cups of chicken stock (regular, low sodium, or vegetable stock can be used).
  3. 3Mix all the ingredients in the crock pot.
  4. 4Cover the crock pot and cook on low for about four hours.
  5. 5In a separate bowl, mix a half stick of melted butter and a quarter cup of flour together.
  6. 6After the soup has cooked on low for about three hours, pour the butter and flour mixture into the soup in the crock pot.
  7. 7Stir the butter and flour mixture into the soup.
  8. 8Add two cups of whole milk to the soup.
  9. 9Add three cups of shredded extra sharp cheddar cheese to the soup.
  10. 10Optionally, add about a teaspoon of ranch seasoning for extra flavor.
  11. 11Mix all the newly added ingredients into the soup.
  12. 12Put the crock pot back on the heat and let it cook for another hour to an hour and a half.

Tips

  • You can use regular or low sodium chicken stock, or vegetable stock.
  • You can cut the broccoli pieces larger if you prefer, but smaller pieces resemble Panera's soup more.
  • Do not add the cheese until the last step of cooking.
  • Ranch seasoning is optional but adds a little zing.
