Directions

  1. 1Tenderize the chicken breasts using a meat tenderizer to break up connective tissue, help it cook evenly, and allow marinade to penetrate faster.
  2. 2Season both sides of the tenderized chicken generously with salt, pepper, and Kinder's Carne Asada seasoning.
  3. 3Rub the seasoning into the chicken to ensure it adheres well.
  4. 4Place the seasoned chicken into a Ziploc bag.
  5. 5Add a little olive oil to the bag with the chicken.
  6. 6Seal the bag and ensure the chicken is well-coated with the oil and seasoning.
  7. 7Marinate the chicken in the refrigerator overnight for at least 24 hours.
  8. 8Heat a pan to medium heat.
  9. 9Place the marinated chicken breasts into the hot pan to sear.
  10. 10Cook the chicken for 5 minutes per side.
  11. 11Remove the chicken from the heat, put a lid on the pan, and let it sit for 10 minutes to finish cooking and retain juiciness.
  12. 12Place the fully cooked chicken into a KitchenAid mixer to shred it.
  13. 13Transfer the shredded chicken back into the pan to absorb all the cooking sauce.
  14. 14Place the chicken on the bottom of a bowl.
  15. 15Add cheese as a topping.
  16. 16Add chopped tomatoes, onions, jalapeños, and bell peppers (similar to pico de gallo ingredients).
  17. 17Prepare the secret sauce by blending 1/2 cup plain Greek yogurt, 2-3 tablespoons mayonnaise, 1 chipotle pepper in adobo sauce with some of its sauce, garlic powder, salt, pepper, and juice from 1 lime.
  18. 18Drizzle a generous amount of the prepared sauce over the bowl.
  19. 19Add fresh cilantro on top.
  20. 20Season with a little extra salt.
  21. 21Add a dash of pepper.
  22. 22Squeeze a lime wedge over the toppings.
  23. 23Serve and enjoy the taco bowl as is, with chips, in a taco, or in a burrito.
