Add a healthy splash of oil to the pan and heat it over medium-high heat.

Cut the yellow baby potatoes into halves or quarters, depending on their size.

Add the potatoes to the pan, season with salt, and sprinkle over half a package of taco seasoning.

Toss everything together to ensure the potatoes are well coated with oil and seasonings.

Cook the potatoes for about 5 to 7 minutes until they start to soften.

Add a pound of lean ground beef to the potatoes, season with salt and pepper, and break it up.

Once the meat is done, mix it all in with the potatoes.

Add a can of Rotel tomatoes with its juice and the remaining half of the taco seasoning packet.

Pour in about a third of a can of water.

Cover the pan and cut the heat down to medium or medium-low.

Let it cook for about another 10 minutes until the potatoes are fork-tender.

Once potatoes are done, cut the heat.

Throw some cheese on top.

Cover it back up and let it sit for a few minutes until the cheese melts.

Serve up a bowl of this, optionally with sour cream and pico.
