One Pot Ground Beef and Potato Taco

Directions

  1. 1Add a healthy splash of oil to the pan and heat it over medium-high heat.
  2. 2Cut the yellow baby potatoes into halves or quarters, depending on their size.
  3. 3Add the potatoes to the pan, season with salt, and sprinkle over half a package of taco seasoning.
  4. 4Toss everything together to ensure the potatoes are well coated with oil and seasonings.
  5. 5Cook the potatoes for about 5 to 7 minutes until they start to soften.
  6. 6Add a pound of lean ground beef to the potatoes, season with salt and pepper, and break it up.
  7. 7Once the meat is done, mix it all in with the potatoes.
  8. 8Add a can of Rotel tomatoes with its juice and the remaining half of the taco seasoning packet.
  9. 9Pour in about a third of a can of water.
  10. 10Cover the pan and cut the heat down to medium or medium-low.
  11. 11Let it cook for about another 10 minutes until the potatoes are fork-tender.
  12. 12Once potatoes are done, cut the heat.
  13. 13Throw some cheese on top.
  14. 14Cover it back up and let it sit for a few minutes until the cheese melts.
  15. 15Serve up a bowl of this, optionally with sour cream and pico.
