Cheesy Taco Beef & Potato Bowls with Creamy Chipotle Sauce

Directions

  1. 1Start by slicing and dicing the potatoes.
  2. 2Add the diced potatoes into an air fryer.
  3. 3Spray the potatoes with cooking spray.
  4. 4Season the potatoes with garlic powder, paprika, salt, and pepper.
  5. 5Air fry the potatoes at 390 degrees for 20 minutes.
  6. 6Finely chop up a white onion.
  7. 7Add the chopped onion into a hot skillet, letting it dance until it is nice and golden brown.
  8. 8Add minced garlic to the skillet.
  9. 9Add the lean ground beef to the skillet.
  10. 10Add taco seasoning and tomato paste to the beef.
  11. 11Let the beef dance until it is nice and fully cooked.
  12. 12To make the creamy chipotle sauce, add non-fat Greek yogurt into a blender.
  13. 13Add 1 chipotle pepper in adobo and 1 tsp adobo sauce to the blender.
  14. 14Add 1 clove garlic (or 1/2 tsp garlic powder) to the blender.
  15. 15Add the juice of 1 lime to the blender.
  16. 16Add salt to taste to the blender.
  17. 17Blend the sauce until it is nice and smooth.
  18. 18Add the cooked potatoes into a bowl.
  19. 19Add the beef mixture on top of the potatoes.
  20. 20Add shredded lettuce on top.
  21. 21Add reduced-fat shredded cheddar cheese.
  22. 22Drizzle the creamy chipotle sauce over the bowl.
