Directions

  1. 1Score the pork fat, coat with mustard and seasoning, then smoke fat-side up at 275°F to an internal temperature of 170°F.
  2. 2Place pork in a roasting pan, top with brown sugar and butter, cover with foil, and continue cooking until it reaches 203°F.
  3. 3Cool the pork, then shred.
  4. 4Simmer ketchup, apple cider vinegar, Worcestershire, yellow mustard, brown sugar, garlic powder, onion powder, mustard powder, smoked paprika, red pepper flakes, salt, and pepper until thickened, then stir in 1 tbsp butter.
  5. 5Mix cornbread mix, egg, water, milk, and chopped jalapeños.
  6. 6Bake in a greased pan at 400°F, then press a smaller pan into the center to form the crust.
  7. 7Boil elbow macaroni 1 minute under package directions.
  8. 8Make a roux with butter and flour, whisk in whole milk and evaporated milk, season with salt, pepper, and garlic powder, melt in cheeses, then fold in cooked pasta.

  • 1 tbsp smoked paprika
  • 1 tsp red pepper flakes
  • to taste salt & pepper
  • 1 tbsp butter
  • 1 box cornbread mix
  • 1 whole egg
  • 1/3 cup water
  • 1/3 cup milk
  • 1 cup jalapeño, chopped
  • 2 cup elbow macaroni
  • 1/4 cup butter
  • 1/4 cup flour
  • 2 cup whole milk
  • 12 oz evaporated milk
  • to taste salt
  • to taste pepper
  • 2 tbsp garlic powder
  • 1 cup sharp cheddar cheese
  • 1 cup Monterey Jack cheese
