Bacon Jam Ribs

Directions

  1. 1Season the ribs and place them in a smoker or oven at 250°F (121°C).
  2. 2Wrap the ribs in foil with apple juice and continue to cook.
  3. 3Render the chopped bacon in a pan.
  4. 4Strain the bacon, reserving the rendered fat in the pan.
  5. 5Add the diced shallots to the fat and cook until caramelized.
  6. 6Stir in the brown sugar, balsamic vinegar, maple syrup, minced garlic, and the cooked bacon.
  7. 7Simmer the mixture until it becomes thick and sticky.
  8. 8Spoon the bacon jam over the ribs and cook for an additional 10 minutes.

  • to taste apple juice
  • 1 lb bacon
  • 6 shallot, diced
  • 2 clove garlic
  • 1/3 cup balsamic vinegar
  • 1/3 cup brown sugar
  • 3/4 cup maple syrup
