Sausage potato soup

Directions

  1. 1Brown the Italian sausage in a large pot.
  2. 2Set the browned sausage aside.
  3. 3In the same pot, add olive oil, diced yellow onion, diced celery, and shredded carrots.
  4. 4Cook the vegetables until the onion is translucent, about 5 minutes.
  5. 5Add parsley flakes, basil, and minced garlic to the vegetables.
  6. 6Mix the spices and vegetables until well combined.
  7. 7Add chicken broth and peeled, diced potatoes to the pot.
  8. 8Cover the pot and cook until the potatoes are fork tender, about 15 minutes.
  9. 9Set the pot aside.
  10. 10In a separate pan, add salted butter and melt it.
  11. 11Add all-purpose flour to the melted butter and mix until well combined.
  12. 12Add milk and cook on medium heat until the mixture thickens.
  13. 13Add heavy cream to the mixture.
  14. 14Add shredded cheddar cheese and melt it into the mixture.
  15. 15Add the browned sausage back into the pot with the cooked potatoes and vegetables.
  16. 16Add the creamy cheesy mixture to the pot.
  17. 17Mix all ingredients in the pot until well combined.
  18. 18Add salt and pepper to taste and serve.

  • 0.75 cup shredded carrots
  • 0.5 diced yellow onion
  • 0.5 cup diced celery
  • 1 tbsp minced garlic
  • 1 tsp parsley flakes
  • 1 tsp basil
  • 4 cups chicken broth
  • 4 cups peeled and cubed potatoes
  • 4 tbsp salted butter
  • 3 tbsp all purpose flour
  • 2 cups milk
  • 0.5 cup heavy cream
  • 2 cups shredded cheddar cheese
  • salt
  • pepper
