4Prepare the dough: In a food processor, blend flour, baking powder, salt, and cold butter until it resembles breadcrumbs. Add water gradually until it forms a dough.
5Knead dough on a lightly floured surface. Roll it out thinly, sprinkle grated cold butter evenly over the surface.
6Fold the dough in half, roll it again, and repeat once more. Cut circles of dough using a plate as a guide.
7Brush each circle with egg wash, add a spoonful of the meat mixture, and fold the dough over into a half-moon shape. Crimp the edges using a fork to seal.
8Bake the patties in the oven. Once baked, brush with more egg wash and sprinkle with salt. Garnish with thyme before serving.
