1In a bowl, add 125g of plain flour, 60g of potato starch, 1 tsp of garlic powder, 1 tsp of onion powder, 1 tsp of black pepper, 1 tsp of paprika, and 1 tsp of salt. Mix well.
2Take half a cup of the flour mixture and add it to another bowl with half a cup of sparkling water. Mix again.
3Dunk the chicken thighs first into the wet mixture, then into the dry mix. Repeat this process one more time for extra crispiness.
4Shake off the excess, give them a spray, and air fry at 190°C for 12-15 minutes, flipping halfway.
5Meanwhile, chop up some lettuce.
6For the garlic sauce, mix 80g of 0% Greek yoghurt, 60g of light mayo, ½ lemon juice, 1 tsp of garlic powder, salt to taste, and 1 tsp of honey until completely smooth.
7Once the chicken is crispy, brush on a mixture of 70g of sriracha and 30g of honey until fully coated.
8Assemble the sandwich on a toasted brioche bun: garlic sauce, lettuce, crispy chicken, cheese, and the top bun.
