1Add 100g of mustard oil to a pan and heat it thoroughly.
2Add 5 pieces of black cardamom, 40 pieces of black pepper, and 8 pieces of cloves to the hot oil.
3Add 1 kg of mutton to the pan.
4Add salt to taste to the mutton.
5Mix the mutton with the spices and fry until browned.
6In a bowl, combine curd with 1/2 spoon of turmeric, 1 spoon of dry ginger powder, 4 spoons of coriander, 5 spoons of red chilli, 1 spoon of fennel powder, and 1/2g of saffron.
7Mix all the ingredients in the curd bowl well.
8Add 100g of brown onion paste to the mutton in the pan.
9Add the curd mixture to the mutton.
10Add 50g of red chilli paste to the mutton.
11Mix everything thoroughly.
12Add water to the mutton mixture.
13Cover the pan with a lid and simmer until cooked through.
14After cooking, the Rogan Josh is ready to be served.
