Scarlet Gourd Chutney

Directions

  1. 1Heat 1 tbsp oil in a kadai.
  2. 2Add diced scarlet gourds.
  3. 3Sauté for 3 mins in medium high flame.
  4. 4Cover it and cook in medium flame for 3 minutes.
  5. 5Open it and check whether it's cooked or not. If it is not, then again cover it and cook it for 2 to 3 minutes in medium flame.
  6. 6Once it's cooked, transfer into a bowl and keep it aside.
  7. 7Now add a remaining oil into the same Kadai.
  8. 8Add green chilli, Ginger, Garlic, Shallots, Onion, Tomato, All masala along with salt and Paneer.
  9. 9Add some Water and mix it well.
  10. 10Cover it and cook it for 3 to 4 minutes in medium high flame.
  11. 11Now transfer into a plate and let it come to room temperature.
  12. 12Once it comes to room temperature, transfer into a mixer jar along with scarlet gourd, Coriander leaf and some water.
  13. 13Now serve it with chapati or dosa.

  • 200 g scarlet gourd
  • 100 g low fat paneer
  • 15 ml EVOO (Extra virgin Olive oil)
  • 3 Green chilli
  • Ginger
  • 5 garlic
  • 1 Medium onion, chopped
  • 25 g shallots
  • 2 Medium tomato
  • 0.5 tsp turmeric powder
  • 1 tsp Kashmiri red chilli powder
  • 0.5 tsp jeera Powder
  • 0.5 tsp Garam masala
  • Salt
  • Water
  • Coriander leaf
  • 1 lemon squeeze
