Chili Crisp Beef Bowls with Coconut Broth

Directions

  1. 1Cook rice according to package directions.
  2. 2Heat a skillet over medium-high heat. Drizzle with oil, then add the ground beef, breaking it into small pieces as it browns.
  3. 3Add the pepper, onion and garlic to the beef once it is almost fully cooked and sauté until softened.
  4. 4Mix together the soy sauce, honey, rice vinegar, chili crisp, ginger powder and beef broth then add to the beef mixture, stirring to combine. Reduce the heat and allow the sauce to slightly cook down.
  5. 5For the broth, add coconut milk, soy sauce, chili crisp and ginger to a sauce pan. Bring to a boil and stir to combine all ingredients.
  6. 6Assemble bowls by adding rice, then topping with beef, broth, and cucumbers.

  • 1/4 cup beef broth
  • 1 15oz can coconut milk
  • 1 tbsp soy sauce
  • 1 tbsp chili crisp
  • 1/2 tsp ginger powder
  • to taste diced cucumber (optional)
  • to taste chili crisp (optional)

Tips

  • Use quinoa instead of rice if desired.
  • Use less chili crisp if sensitive to spice.
  • Season with salt if needed.
