Directions
- 1Heat olive oil and a pad of butter in a large pot.
- 2Sauté onion and garlic.
- 3Add in Italian sausage and brown it.
- 4Once brown, season with salt, garlic powder, Italian seasoning, basil, and red pepper flakes.
- 5Add tomato paste in the center of the meat.
- 6Cook it off for 1-2 minutes.
- 7Add in chicken or beef broth.
- 8Add in jar of marinara.
- 9Add in heavy cream.
- 10Season again.
- 11Bring it all to a boil and then reduce the heat and let it simmer.
- 12Break the lasagna noodles into squares and toss them in.
- 13Finely chop up some spinach into strips and toss them in.
- 14As soon as the noodles are done, the soup is ready!
- 15In a bowl, mix ricotta cheese, grated parmesan, shredded mozzarella, and parsley.
- 16Season the cheese mixture with the same seasonings as the soup.
- 17Serve with a dollop of the cheese mixture and crusty bread.

- 0.75 box lasagna noodles
- 2 handfuls chopped spinach
- 8 oz ricotta
- 1 cup mozzarella
- 0.5 cup grated parm
- 1 Tbsp chopped parsley
