1Sauté garlic cloves in extra virgin olive oil and remove them.
2In the same oil, fry the almonds, then fry the slices of bread.
3Peel and slice the potatoes, sauté them in the pan, and add a little salt.
4Transfer the potatoes to a pot, cover with vegetable broth, add cayenne peppers, and cook.
5Prepare the majado by pounding the fried garlic, almonds, bread, and salt in a mortar, then transfer the mixture into a food processor with a bit of broth to blend until smooth.
6Add saffron and the blended majado to the potatoes in the pot, stir, and cook further.
7Add parsley and stir.
8Top with sautéed bacon, boiled eggs, and a pinch of tajín before serving.
