Whisk together the flour, cornmeal, cornstarch, sugar, baking powder, garlic powder, paprika, salt, and pepper in a large mixing bowl.

Add the diced onions and milk to the dry ingredients and stir to combine.

Heat peanut oil in a large skillet over medium-high heat.

Portion the batter into the skillet using a half-cup scoop, being careful not to overcrowd the pan.

Cook for 2 to 3 minutes until golden brown on the bottom, then flip.

Remove the patties and place them onto a wire rack.
Ingredients
1 cup all-purpose flour
2 tbsp cornmeal
1 tbsp cornstarch
2 tsp white granulated sugar
2 tsp baking powder
1/2 tsp garlic powder
1/2 tsp paprika
1/2 tsp salt
1/4 tsp pepper
2 1/2 cup sweet vidalia onion, diced
1 cup milk
1/2 inch peanut oil

Tips
You can substitute peanut oil with canola oil or vegetable oil.
Serve with ranch dressing or ketchup.
