Grilled Kidney Skewers

Directions
- 1Slice the kidney into smaller pieces.
- 2Place the sliced kidney into a large wooden bowl.
- 3Rinse the kidney with water.
- 4Add salt to the kidney and water.
- 5Squeeze lemon juice over the kidney and water.
- 6In a separate wooden bowl, add warm water.
- 7Add dry yeast to the water.
- 8Add sugar to the water and yeast mixture.
- 9Stir the mixture with a wooden spoon.
- 10Add olive oil to the mixture.
- 11Add flour to the bowl.
- 12Knead the dough until smooth.
- 13Cover the dough with a cloth and let it rest.
- 14Drain and rinse the kidney pieces thoroughly.
- 15Add paprika, cumin, and salt to the kidney.
- 16Mix the kidney and spices by hand.
- 17Thread the seasoned kidney pieces onto metal skewers.
- 18Remove the rested dough from the bowl and place it on a wooden cutting board.
- 19Slice the dough into smaller, equal portions.
- 20Dust the cutting board with flour.
- 21Roll out a portion of dough using a rolling pin into a thin, round flatbread.
- 22Place the flatbread on a hot pan over the fire.
- 23Cook the flatbread, flipping until golden brown and puffed.
- 24Slice the onion into thin rings.
- 25Chop fresh parsley.
- 26Add the chopped parsley to the sliced onions.
- 27Dice the cherry tomatoes.
- 28Add the diced tomatoes to the onions and parsley.
- 29Sprinkle sumac over the vegetable mixture.
- 30Grill the green chili pepper over the fire until charred.
- 31Remove the charred skin from the grilled chili pepper and slice it.
- 32Grill the kidney skewers over hot coals, turning occasionally until cooked through.
- 33Place a cooked flatbread over the grilled kidney skewers to absorb the juices.
- 34Remove the kidney from the skewers onto the flatbread.
- 35Add the sliced grilled chili pepper to the kidney on the flatbread.
- 36Add the mixed fresh vegetables (onion, parsley, tomato with sumac) over the kidney and chili.
- 37Roll the flatbread tightly around the kidney and vegetable filling.
- 38Slice the wrapped kidney flatbread into two halves.
