One Pot Lemon Chicken and Orzo

Directions

  1. 1Cube about 1 pound of chicken breast into bite-sized pieces.
  2. 2Add 2 tablespoons of olive oil to the pan and heat it over medium-high heat.
  3. 3Add in the chicken and season it with 1 teaspoon of salt, half a teaspoon of black pepper, and 1 teaspoon of garlic powder.
  4. 4Brown the chicken for about 6 to 8 minutes, stirring occasionally.
  5. 5Pour in 4 cups of chicken broth.
  6. 6Add in a quarter cup of freshly squeezed lemon juice.
  7. 7Add in 1 pound (16 ounces) of orzo pasta and 2 tablespoons of dried basil.
  8. 8Stir everything together and bring it to a simmer.
  9. 9Once it comes to a boil, reduce the heat to medium, pop a lid on, and let it simmer until the pasta is done cooking (about 9 to 10 minutes).
  10. 10Every couple of minutes, give it a little stir to make sure that the orzo doesn't stick to the bottom of the pan.
  11. 11Turn off the heat and add in half a cup of freshly grated Parmesan cheese and a quarter cup of salted butter.
  12. 12Stir until the cheese and butter are melted and smooth.
