JAMAICAN PEPPA SHRIMP

Directions

  1. 1Clean and season the shrimp with salt, black pepper, annatto powder, green seasoning, paprika, onion powder, and garlic powder.
  2. 2Let the shrimp marinate.
  3. 3Chop the aromatics: green onion (scallion), yellow onion, scotch bonnet peppers (no seeds, 4 used), garlic, thyme, and pimento berries.
  4. 4Heat some oil in a pan and add more annatto powder.
  5. 5Once the oil is hot, sear the shrimp for a couple of minutes on each side. Do this in two batches if you have a lot of shrimp, adding more oil if needed.
  6. 6After the shrimp gets a nice sear and turns red from the annatto, add back the full batch of shrimp.
  7. 7Add the aromatics to the pan with the shrimp and sweat them down for a couple of minutes.
  8. 8Once everything becomes nice and fragrant, add a little bit of water.
  9. 9Bring the mixture to a simmer.
  10. 10Cover the pan and cook for 10 minutes.

Tips

  • You can use any size shrimp you like but it's suggested to go for bigger shrimp.
  • You can adjust the heat level by how much peppers you use.
  • Shell on is optional; you can take it off before seasoning or during eating.
